There are many ways to get knowledge jn the field you want. As you have mentioned that you have done your undergrad in ECE and M.Tech in Embedded systems.
See, you can go for PH.D in Nutrition as for PHD program, you can choose any respective field you want. The most important thing that matter is the need for the course along with the interest.
There is no short cut but you can try online courses as well.

To become a Registered dietician one needs to fall the in the following eligibility criteria.
- Clear class 12th with any stream (Science with Biology is preferred).
- Pursue B.Sc/B.A Nutrition or B.Sc Food Technology.
- Pursue a PG Diploma in Nutrition or an M.Sc. in Food and Nutrition.
- Intern for 6-months and clear the Registered Dietician entrance exam.
After this you will be eligible to appear for the RD exam.
