You should choose domain subjects which were there in your 12th standard as it will help you in scoring maximum marks and will increase your chances of getting into the top colleges offering English Hons.

Also, check the eligibility of the university you want to be admitted into as to whether they want you to have a particular subject as your domain in the CUET Examination or not.
