You don't need the 512 storage variant. 256 gb is enough to serve your purpose. So you can definitely buy MacBook Air M1 with 8gb RAM and 256gb storage. It's good that you have money and you can buy 512gb variant but it's overkill. So, it's upto you. The Laptop you have chosen is great. Don't overthink on this one just go for it. Also, about graphics card there is always an integrated graphics card present in the CPU of your laptop. The integrated GPU of the M1 processor that you want to get is pretty decent.

Yes one can pursue for sure.
Sketching is though an important part of animation
Ones animatory skills are well developed one that person have a pretty good knowledge about the graphics and sketching although one can surely go ahead even if these skills are not that precise as you can further learn them through programming courses and some overall experience. But always try to work little on that amd frame some mpre innovative infrastructured ideas about how you going to showcase your creative skills.
Its not like you cannot do it just because you don't lnow sketching its also because one have to have a little basic knowledge on the ground level to address it at a more advanced level.
