Yes, you can definitely write your GS paper answers in English even if you have chosen Hindi literature as your optional paper, being a language subject you will have to write your Hindi literature optional paper answers in Hindi .
This is because,
The UPSC Prelims and Mains examination question paper are set in both English and Hindi except the language papers -A and B in mains examination while prelims examination is objective, Mains examination is subjective and you have the option to write your answers in English or in any one of the Eighth Schedule languages .
So, beside English , you have the option to write answers in the language included
in the Eighth Schedule to the Constitution which consists of 22 languages listed below:-

UPSC civil services examination has 3 stages listed below :-
*prelims exam :- it is objective paper and is of qualifying nature , so you just need to at least qualify it to be eligible for mains examination, the score /marks obtained by you in your prelims examination is not added up or used in your final merit. Your prelims exam consist of 2 papers: -

-) general studies II ( csat )
You get 2 hours for each paper
*Mains exam. :- it is descriptive /written examination . There are a total of 9 papers which are listed below:-
-) paper A :- compulsory indian language.
-) paper B :- english
-) essay
-) general studies I
-) general studies II

-) general studies IV
-) optional I
-) optional II
The compulsory indian language and english are qualifying in nature . You just need to qualify them. The marks obtained by you in these two papers will not be counted towards merit list.
*Interview :- After qualifying mains, you have to go through interview round, and it is more of test of your personality rather than knowledge.

Hindi quotes of Bachelor of Education the method of teaching subjects should be charged on the subject has taken in his in his or her graduation course. If you complete your UG course in Hindi d letter then we have to to take the method teaching subject from Hindi literature. It cannot be changed either if the student it have not changed the subject has taken in his graduation course.

Can i write the GS papers and the essay (paper 1-5) in English while having my optional subject as Hindi Literature?

I would like to tell you that, Yes! Now UPSC provides options to write GS and Optional papers in different mediums (Since 2018). If you choose to write GS and Essay papers in Hindi and Optional Paper in English you can do so.
But point to be noted here is, If you choose to write GS and Essay papers in English then you have to write Optional papers also in English. It means, given the technical/subject specific terminology in optional, you are given opportunity to write it in English while writing GS papers in your fluent or compatible language.
You will get these option while filling the application form for prelim. UPSC ask optional subject and medium both for GS & Essay papers and Optional subject separately in the preliminary stage itself. So, you get sufficient time to get yourself ready and mater in the chosen language.
Further, If you write your GS papers in English medium and want to choose Hindi for interviews that option is also available. But that is not vice versa, that is if your medium for mains is Hindi/regional languages, you can not opt English for Interview.
So, Go ahead without any hesitation or concern if you are more comfortable for Optional to write in English and confident for GS and Essay papers to write in Hindi or any other regional languages (VIII Schedule languages).
