There is nothing like good or bad regarding any course. It completely depends on your interest pool. Just like every other institute, IIT BHU also as some guidelines for the safety of female candidates you can have a look at them by visiting their official website. IIT BHU offers 100 seats in Mining Engineering Course and 20 seats in Mining Engineering Dual Degree course for female candidates via JEE Advanced. First of all I want to mention that for getting into B.Arch into any of the IITs you have to qualify JEE Advance along with AAT Exam.
Now, coming on to the preferred IIT in B.Arch stream I would probably rate IIT KHARAGPUR first, then IIT Roorkee and finally IIT BHU based on their placements and on their respective NIRF 2020 Rankings.
I hope that you have now got a fair idea of the colleges, but at the same time you also have to work very hard for getting into these IITs. Wish you all the best for your Preparations!!

IIT BHU has a century over old alumini network and even a big name outside the country. The placements are quite good specially in core branches.
Faculties are also well experienced, knowledgeable and strict you will get your overall growth here there is only in some exceptional case that you will not get good faculty but its rare and a small advice that don't depend too much on faculties regarding marks, placement or anything no one gives you assurity of anything you have to do self study either you are in any college and make yourself industry ready throughout your college journey.

The name of colleges mentioned by you are IIT Madras, IIT Guwahati and IIT BHU. All these colleges are top-notch colleges equipped with everything of a students' utility. Now to choose among them you should prioritise the branches. Ypu should consider what fascinates you or what you are passionate about for. Moreover, if you want to be in government sector then you can choose civil engineering in IIT Madras. If you are good in Electronics, signals and semiconductors then you xan go for ECE in IIT BHU. Else if you would like to prioritise based on college and not branch or stream then you should choose IIT Madras.

IIT Roorkee ECE is obviously much better than IIT BHU CSE, on most of the aspects be it Infrastructure, Outlook, Faculty and Research Facilities. As far as IITR is concerned you should not have any doubt regarding the Placement Prospects. IITR blooms with career prospects and opportunities with some of the major core companies for ECE include Intel, Applied Materials, Microsoft, Google, Texas Instruments, Nvidia, Samsung ,etc. Even if you are dead interested in CSE, you always get 2 chances at IITR to change your branch, which is unlike in other top 8 IITs. So decide wisely.

IIT varanasi is BHU which is some of the oldest colleges in INDIA and IIT indore is of 2009 both are very good colleges excellent faculties and nice environment for the studies

Admission for Engineering has two prospects. The first one is the branch you want to pursue, and your career and interest are the attributes, and the Second one is College, and the placement and tag are the motivation factors.
Metallurgical Engineering has a minimal scope in India over Mechanical Engineering. IIT Bombay and IIT Varanasi are both old IITs, though IIT Bombay leads in the ranking.
I will suggest pursuing Mechanical Engineering in IIT Varanasi will be a wiser decision than pursuing Metallurgical Engineering in IIT Bombay.
