Actually while filling the NCHMCT JEE 2020 registration form i have chosen my category as general but i fall in EWS category. For NCHMCT JEE 2020 counselling i want to use my EWS certificate. What should i do??

As you have already appeared in NCHMCT JEE 2020 on August 29 with your category as general while filling the application form, you cannot sit in counselling with an EWS certificate. This is so because when NCHMCT JEE cutoff will be released, it is different for each category. General candidates have different cutoff and EWS category has a different cutoff.
However you can still take your EWS certificate and ask the query desk of NTA or ant NCHMCT JEE score accepting college if you can use it in counselling.

As you not opt your category at the time of form filling in NCHMCT jee application form.you will not get the Benefits of your category and you have to proceed forward with general category only as their is no such. Window provided by NCHMCT jee to change your category.

can I get admission in good hotel management colleges without passing in nchmct jee exam?
If you want to get Admission in any of the IHMS, then it is mandatory to qualify NCHMCT exam, but if you can't clear the exam then there are other colleges too where you can take direct admission in Hotel management course, below I'm listing some of the Colleges where you can get Admission without any entrance exam:

I have been allotted IHM Bhubaneswar in 1st round counselling of NCHMCT JEE 2020. If I go for seat upgradation in 2nd round counselling, will I lose my seat in IHM Bhubaneswar?
Hey there!
You wouldn't loose the current seat allotment given to you unless you choose another seat and make the changes official. It's not necessary that you'd get what you wanted in second round so you can still take admission in your initial seat provided.
