First of all the question you have posted is a bit confusing. But let me try to answer your query.
For Central University Entrance Exam (CUET), one can add upto six domain subjects. Since you've already selected four subjects, you can add two more subjects of your choice.
You have also mentioned DU in your question. In that regard if you want to pursue B.El.Ed course in Delhi University, then this year there is DUET. You can select upto four subjects for this entrance test. While in some colleges, the admission will be merit based.

Unfortunately not. See, there are some core subjects which hold more value and then there are optional subjects, which holds less value. In this case, Physics, Chemistry and Biology are your core subjects and you CANNOT remove them under any circumstance, while Physical Education is an optional subject.
So, you cannot swap a core subject with an optional subject, thus you cannot replace Physics with P.Ed. All the best!

As per your mentioned query yes, you can choose any subject as your extra subject. After new education policy it is possible for students to study whichever subject they want to study only if the subject is available in the college.
But in this situation you can face a problem of class intersection. Maybe your mentioned two subjects class conduct at the same time then you can only able to attend one class and you have to study other subject on your own.
So, before choosing the subject get to know about class timing otherwise you are free to choose any subject available in your college.

See, Mathematics in class XIIth examination is treated as a core subject and you cannot ever replace a core subject from your palette no matter what. So, unfortunately you CANNOT replace Maths with Physical Education immaterial of whether you want Maths or not. So, if you fail in Maths, then you'll have to give compartment examination.

See percentage which is considered for determining the eligibility for JEE-Advance is of overall class 12th result not for best scoring subjects so your overall percentage matters however for this year the percentage criteria has been relaxed and even if you have scored less than 75% then also you will be eligible for admission to NITs and IITs on the basis of JEE-Main and JEE-Advance score respectively.
