For Maharashtra State you can register and apply for minority certificate online through this Aaple Sarkar scrutiny ( District Collector / MDD Department) : -

Once you apply for the certificate, it will take around one month to obtain the certificate.Incase if your documents are found not sufficient to obtain minority status,you will be given a one and half month period to submit the necessary proof.Also gap affidavit is required in case the student was not able to complete the course within the prescribed time limit.Since you have taken an year off after completing your HSC you won't be needing to submit it.All the Best.

For document verification you have to submit your Minority certificate. It can be obtained in the form of self declaration of belonging to the respective community.
As you have mentioned that you passed out in the year 2019 so you do not need to provide any gap year certificate. A year gap does not matter because that much as it would not affect your placement and a single year is still acceptable as many people do take gap years.
