According to prior research, Applied Electronics is more easier than Electrical and Electronics (EEE) (AE).
If you're looking for work in information technology, consider AE (same employers as EEE, although 4 years in EEE is challenging).
Take either AE or EEE if you're looking for core positions. EEE has more possibilities for higher education than AE.
And whatsoever branch you choose after earning your B.Tech from CET, you'll unquestionably enjoy the prestige of the school.

The branch is good if you have interest in it. Mostly company nowadays allow all the branches to appear the test for on campus placement but there are still some companies who give priorities to CS/IT branches only. So, if you have good knowledge in technical skills then you can get placed in some software companies or if you want to go for core companies then you can keep your knowledge strong in your branch studies. But getting placed depends also on luck factor too. The number of people getting placed from electronics and instrumentation branch in SJCE college is not so good. But if have good knowledge in the field you want to go for, then you might get placed.

In SJCE college also, the placement is quite good but that depends on the company which is going to come to the campus for recruitment. There are some core companies too which conducts on campus placement in SJCE college for core branches. But the number of students getting placed in core as well as software companies from electronics and instrumentation branch is not so good. But you can still try to polish your programming skills for software companies and if you are interested in core companies, you need to have strong knowledge in core field too.
