DU admission to UG programs is through CUET UG 2022.
CUET 2022 Exam pattern
There are 4 categories
Section IA – 13 Languages
Section IB – 19 Languages
Section II – 27 Domain-specific Subjects
Section III – General Test
There are two slots in this exam.
Slot-1
You can choose a maximum of 4 exams in Slot 1.
This comprises one language from Section IA, utmost of two domain-specific subjects (Section II) and one General exam (Section III).
So, according to your subject combination if your score marks are greater than the cutoff then you will get admission to DU.
For slot 2
One language from Section IA & IB and an utmost of four domain-specific subjects from Section II. OR
Two languages from Section IA & IB and a maximum of three domain-specific subjects from Section II.

1B( elective language)
19 languages. Choose any one
French, Spanish, German, Nepali, Persian, Italian, Arabic, Sindhi, Kashmiri, Konkani, Bodo, Dogri, Maithili, Manipuri, Santhali, Tibetan, Japanese, Russian, and Chinese.
Domain-specific subjects.

Accountancy/Book Keeping, Biology/ Biological Studies/ Biotechnology, Business Studies, Chemistry, Computer Science/ Informatics Practices, Economics/Business Economics, History, Home Science, Legal Studies, Environmental Studies, Mathematics, Physics, Political Science, Psychology, Sociology, Anthropology, and Sanskrit.
B2
Engineering Graphics, Entrepreneurship, Knowledge Tradition Practises in India, Fine Arts/ Visual Arts/ Commercial Arts, Teaching Aptitude, Agriculture, Mass Media/Mass Communication, Physical Education/NCC/Yoga, and Performing Arts.
General Test
Subjects

Average starting Salary for Russian Interpreter in India is around 2.0 Lakhs per year (16.7k per month). 2 years of minimum experience is required to be a Russian Interpreter. Russian Language Expert salary in India with less than 2 year of experience to 11 years ranges from 3.3 Lakhs to 8.0 Lakhs with an average annual salary of 5.7 Lakhs based on 21 salaries.
Learning a second language is always good, but as you said that you have completed all levels in Russian language I assume you are confident about choosing to become an interpreter. Now I must tell you that interpreters are in great demand today and you can earn upto INR 3.9 LPA TO INR 6.9 LPA . This can grow based on the level of expirence you have.

In NEET 2016, the examination was conducted in English and Hindi, it was announced that students can write exams in Tamil, Telugu, Marathi, Bengali, Assamese and Gujarati languages from 2017 onwards. Kannada and Odia languages are added to the list so that students can write the exams in nine Indian languages and English.

Yes your application will proceed further and of course you will get to sit in the exam. The revised exam pattern of CUET mentions that candidate have to choose a maximum of 6 subjects out of the given 27 domain subjects and you've chosen 3 then it is totally fine.

In response to your query, the official form which has to be filled for the examination does provide you the language to give the exam in, if you filled English as your medium of language then that would be followed in the exam. However if a correction window is still open to change the form then you do the same or if it's a computer based examination sometimes there is an option to change the medium of language, but that would really depend on the examination you would appear for and the candidate should watch out for changing the language while reading the instructions for the question paper.

If you choose Gujarati, the questions will be presented in both Gujarati and English. The NEET exam is now available to candidates in 14 languages, therefore if you choose a language other than English, the questions will be delivered in both that language and English. However, if you have selected English as your language for the exam paper, the questions will only be asked in English. So, you need not worry and just focus on the exam preparations!
This was done to avoid question mistakes in a particular language and the candidate can refer to the English mode of paper for any clarifications.

For your higher studies you can very comfortably pursue honours programme in any of the subjects you prefer, you'll be glad to know that in today's time foreign languages can help you grab high paying jobs in various MNCs, so you can go for language studies and apply for BA Hons. Programme in various central and state Universities. Apart from this if you have good command in language you can go for journalism and mass communication courses, in myriad universities you'll find bjmc courses.
Based on your interest you have large number of courses. For now I'll advise you to apply for cucet, and for entrance exams of different universities.
