An emulsion is a colloidal system in which one liquid is dispersed in another. Emulsions are colloidal suspensions comprising microscopic droplets of one liquid suspended inside another liquid (the dispersed phase). Milk (in which fat droplets are dispersed in water) and different salad dressings (in which oil is spread in vinegar or other aqueous solutions) are common examples of emulsions.
