See all the three courses. If you study from a good college and if the curriculum is good then you will learn some really interesting topics. Now from a job perspective, AI is a developing industrial field. At present there are need of AI engineers but the number of companies working with AI is increasing but still its not as much as IT or Software companies. SO if you go for Data Science or Business System then you will have more number of companies with a good need of engineers in the field. I am not telling AI is not a good choice, but its a developing field so you should be very keen about the subject and the knowledge in order to get a good job as the competition will be high because there are PhD candidates and there are Data Scientist as well. So be clear about the concepts and about your skill. If you learn the skill of AI very well then let me assure you, you will get much more scope than any of the engineering fields.
