The answer to this depends on your interests. For most part ECE and EIE subjects, both cross paths at different periods of your graduation, but key difference is the core part where basically everything changes.
Study point of view :
ECE :
Core parts deals with Communication (Satellites/Telecom/Analog/Digital etc)
EIE :
Deals with more of Instumentation (Sensor Design/Metrics etc)
Job Perspective :
ECE and EIE are both great if you are preparing for R & D work and want to take on with Masters on specific parts of the core subjects. Companies like Texas Instruments, Qualcomm, Intel, Bosch do hire a decent amount of graduates and post graduates from both branches of Electronics. If you are planning for a Software Job, don’t plan of doing both. Go with CS or IT.
