Can I only study those subjects in College which I have chosen in Cuet?

Hello there,
No, you can choose other subjects too in college even if you haven't chosen them in your CUET Application. You'll just have to clear the eligibility criteria for other subjects. In University of Delhi, when you register in DU you will get the list of courses your are eligible for.
