Digestion of starch begins not in the stomach but in the mouth. When you start to chew your food in mouth it is mixed with saliva. The saliva supplies moisture, carbohydrate-digesting enzyme and amylase. Carbohydrates are digested in the mouth, stomach and small intestine. Carbohydrase enzymes break down starch into sugars. The saliva in your mouth contains amylase, which is another starch digesting enzyme.
