Emulsification of fat is a process of breaking of complex fat molecules into smaller fatty acids and glycerol. Emulsification of fat happens with the help of bile juices. Bile juice is secreted by liver and there are two bile pigments known as Bilirubin and biliverdin. They are stored in gall bladder before their release. These fatty acids are further digested by lipases secreted by pancreas.
