UPSC Civil Services Exam is not restricted to the boundary of specific streams. All streams are equally rewarding. Students moving to class 11 th , who have decided to undertake the UPSC IAS Exam, face a decision dilemma regarding which stream to choose whether Science, Commerce, or Humanities, which prove to be helpful in the UPSC IAS Exam.
Although it is said that it is the approach of the candidate towards exam which increases the success ratio, not the stream. But no doubt, UPSC Exam syllabus has a tilt towards Humanities. Humanities cover the core subjects like Political Science, Sociology, Geography, History, Public Administration, Psychology, and Economics that form the major syllabus for general studies paper which have the maximum weightage across Prelims and Mains and makes it an ideal stream. Therefore, high scoring subjects like Political Science, Sociology etc. give candidates a layout and art of administration, which makes it easy for them to score well. If one has a clear base of these from beforehand, then the battle is already half-won.
The UPSC Civil Services Exam is conducted in 3 stages, followed by an interview. The first two stages are Prelims and Mains.
Prelims
The structure for the Prelims consists of 2 papers. First, focuses on the candidate's knowledge of Indian history, policy, geography, art and culture and, Second, aims at testing logical reasoning skills, data interpretation etc.
Mains
The structure of Mains is a series of 9 papers out of which 2 are qualifying and 7 are ranked, following with the subjects like History, Public Administration, Science and Tech., and optional subjects (like Philosophy, Psychology) chosen by students.

From my point of view you should choose the subject according to that choose the subject and put your priority according to your interest and I would suggest you to choose that subject which excites you and in which you can give more time without getting bored because at last interest matters.
But still if you are interested in the subject which would help you in your UPSC CSE preparation then I would suggest you to go with Humanities stream as it would help you Tu to cover your basics and which would be helping you definitely in UPSC CSE examination.

You can choose any of science ,commerce or arts stream based on your interest after your 10th for your 11th and 12th and then for graduation if you want to become an IAS officer.
This is because,
to become an IAS officer you need to clear UPSC civil services examination and to be eligible for UPSC examination there is no compulsion to have done 10+2 in a particular stream , also there's no compulsion to be a graduate in a particular subject, all you need to be eligible is that:-

But yes,
choosing Arts or the humanities in your 11 and 12th and graduation can be really helpful for your UPSC examination, this is because in Arts you will be learning subjects like history , polity etc which are a part of the UPSC syllabus so it will help you in your upsc examination.

UPSC civil services examination has 3 stages listed below :-
******prelims exam :- it is objective paper and is of qualifying nature , so you just need to at least qualify it to be eligible for mains examination, the score /marks obtained by you in your prelims examination is not added up or used in your final merit. Your prelims exam consist of 2 papers: -

You get 2 hours for each paper
******Mains exam. :- it is descriptive /written examination . There are a total of 9 papers which are listed below:-
-) compulsory indian language.

-) essay
-) general studies I
-) general studies II

-) optional I
-) optional II
The compulsory indian language and english are qualifying in nature . You just need to qualify them. The marks obtained by you in these two papers will not be counted towards merit list.
******Interview :- After qualifying mains, you have to go through interview round, and it is more of test of your personality rather than knowledge.
