Dear Hasibul,
In saliva, there is an enzyme, amylase which help in the break down of starch to sugar. Starch is a polysaccharide and polysaccharide are long chains of monosaccharides so they do not easily bind to the sweet receptors and doesnot cause change on our taste buds.
Good luck!
