how can I know what to study according to my interest

Based on your profile it is clear that you are Arts aspirant studying in 12 th standard.
You might have interest in any subject as you have completed your 10 th standard. You have many subjects upto 10 th standard. Among them important subjects are Mathematics, Physics, Chemistry, English, State Language/ Regional Language, etc. So, you can choose what to study based on the internet you have on the Subjects you have came across or by the score you got in those subjects in 10 th standard. In your 12 th standard accordingly you might have chosen the stream. Next also in the same way you can choose the course you want to do because now you got more information and are experienced in terms of subjects.

You can make list of your favourite subjects and try to find out why you have interest in that subject.What is in that subject that you like the most.
After that start linking it with your career plans.
Example-
If you have interest in science and you want to be an engineer.So you can opt for PCM in intermediate and prepare yourself for different entrance exams in India.
If you have interest in social sciences you can take humanities and opt any humanities course according to your interest. These days students are taking BA hons., integrated courses like BA LLB ,they also study fashion designing etc.
If you want to be a judge ,you can study law,etc.
And there are endless options.
