Infrastructure and faculty wise college is good. I'll focus more on placements and internship in this answer.
Companies like Adobe, Amazon, Capgemini, Cognizant, Cisco, Deloitte, eBay, Goldman Sachs, McKinsey &Company, Google, Indian Oil, JSW Steel, Mahindra, L&T, Microsoft, Oracle, KPMG, Samsung visit the college for campus recruitment. The highest package offered last year was Rs 28lpa by DE Shaw. The average package offered for CSE was around Rs. 7-8 lakhs. Overall it is a great college and provides immense opportunities provided you work hard.

Quality of Professors: Very specific to the department you intend to opt for. I cannot make blanket statements, but in my case, it was a bell curve spanning from exceptionally good to bad, but the exceptionally good ones made it worth it.
Diversity of Students: You can find a decent amount of students from other states, predominantly Erstwhile AP, Kerala and a smattering of North and North East. If in not in your class, you can definitely find people from the same region through clubs and hostel. But my advice would be to not tie yourself to a clique.
Rules and Regulations: No, the college doesn't have ridiculous rules like the ones you mention. But you may find certain hostel rules annoying. Especially if you are girl - you should be ready to coop yourself up in the hostel before 6:30 PM. I think it was slightly better for the guys - 9:00 PM, if I am not wrong. The girls' hostel was also a little uptight about how many weekends you got to go home. Overall, I would say the hostel is manageable with some prudent planning or carefully executed flouting of rules.
Freedom to Students: You do have the occasional professor trying to make life difficult but on the whole, it's a pretty chilled out place. But again, highly department-specific.
Quality of Hostel rooms: Much better than hostels of Government colleges from what I hear. But you would do well to keep your expectations at a minimum. We do have an amazing ground, though.
Food/Canteen,Quality of Infrastructure: The canteen food is your standard college fare, nothing remarkable. But affordable and better than hostel food at any rate. Though Tech doesn't have a sprawling campus like you would expect from a college of this stature, it does have good labs and libraries. And the industry right inside the campus is definitely something not many colleges can boast about.
Extra-curricular activities :Tech has a fair amount of clubs, for interests as varied as literature, fine arts, astronomy, nature, music and automobiles, which remain active throughout the year. You also have the usual suspects - sports, NCC, NSS. A shout-out to the totally awesome English Literary Society.
Recognition from foreign universities :Going by the universities where I know Tech alumni pursue further studies - CMU, Illinois etc. to name a few, I daresay it is widely-known.
Quality of Students :Remarkable. Comparable to the best colleges in the country. Tech gives you a good peer group that competes with you either through intellect or sheer hard work. Nearly two years after graduation, I still count some of my batch mates among the best minds that I know of. This should be a clincher.

I would like to take this opportunity to throw some light on the relative pointers based on my own experience at PSG Tech:
Quality of Professors:Professors are at par with any faculty you could find at any of the top technology institutes in our country including mighty IITs and IISc and NITs. All are highly knowledgeable in their respective area of expertise and deliver with a very professional approach. Most of them possess ample amount of industry exposure( ref. Mechanical, ECE deptts.) and always inspire their students to take on live industry problems for better learning. Definitely professors at Tech are truly an asset.
Diversity of Students(I'm not from Tamil Nadu):I can better answer this question as myself is other than TN state alumnus. A lot of students ply to study here apart from neighboring states of Kerla, AP, Telangana, Karnataka etc. which makes it a fairly diverse tech institute. but not at par with other national institutes.
Rules and Regulations(I heard,in some colleges you can't talk to girls at all):First i dismiss the statement above in brackets if at all it point towards PSG Tech. Its matured insti and instill open environment for intellectual freedom. and rules and regulations are as normal as in any good governing institute in our country.
Freedom to Students: I am not sure of what do you means by freedom here. Apart from night curfews which i believe is for our safety only, there is no such restriction on any student conduct/activity under rules and regulations. Appropriate platforms/forums are provided for students to speak out their grievances and concerns.
Food/Canteen,Quality of Infrastructure:One of the best in India. This is something which you would enjoy once you get into this prestigious insttitute. Alumni never forget the taste of mess food( in good terms :D). World calss labs, sports facilities, industry exposure at each point of course etc. are few to mention here.
