If you have mastered NCERT chemistry or any book and solved and understood each and every question. You are at a very good level to solve most of the NEET questions.
Make sure you master these books and have formed all the concepts. Whatever doubts get cleared from friends or teachers.
Following and solving previous year old questions can help. Think of it in this way the most difficult questions (which are out of syllbabus) most of the students won't know anyway. So at least score full on these ones.

45 questions are asked from chemistry in neet. Talking directly about the percentage of question based on NCERT chemistry varies from year to year and paper to paper. As an average, 75% of the questions are NCERT based and many of them are from the concepts given in NCERT. The more you build the concepts from NCERT, the more you will found the related questions. Try to conceptualise the things, specially from the inorganic portion.
So reading NCERT textbooks is very important. Also, go through the previous years questions, that'll help you analyze how much more efforts you're supposed to put in apart from reading NCERT textbooks. As far as physical chemistry is concerned, questions do not have a set format, anything can be asked. Your concepts should be good enough so that tackling questions in the examinations becomes easier. I'd recommend to practice questions from some good reference books and learn managing your time accordingly as well.
