If you are going to prepare whatever you've done, you should do more.
I cannot say that completing only 10 years of question papers is sufficient or 15 is sufficient. Try to solve as many problems as possible from each subject. Experiment with questions from various sources, such as previous papers, books, sample papers and so on.
Most importantly, do not skip practice tests.
A variety of institutes offer such test series. You can join any of them but self study is the key factor.

For JEE mains i would like to suggest you to atleast go through 5 year sample papers as they usually follow latest year trends and if yous till get the time you can go further but last 5 year you should certainly do. Hope it will help you.

With reference to your above mentioned query, I would like to tell you that in order to perform and score great marks in JEE mains and advanced it's very much necessary to solve and practice the previous year question papers. It makes us familiar with all the difficult questions and problems and helps us in solving those questions in very easy basis. Further, it also helps us to track the time limit that we all take to solve each and every questions.
So, solving the previous year question papers has every piece of benefits, so we all must solve those papers. And according to my opinion you must solve previous 10 years question papers for JEE mains. There are also the reasone for the same.
The first reason is that the format for the question paper changes every 10-13 years, so it is must and necessary that we solve only the previous 6 to 10 years question paper for JEE mains and advance.
The second reason is that the syllabus also keep changing with every 10-13 years. SO solving previous year question paper more than 10 years will be a waste in time. so, it's recommended to solve only previous 10 year question paper.
