Convincing isn't the question here.
Putting up some excuse won't really help as your parents must know you well enough to catch you with that.
However, make sure you're sure about taking engineering up as your career. If you have any other option in mind, tell them. Tell them why you want to pursue that and emphasize on the fact that your plan A will keep you happier than their plan of calling themselves parents' of an engineer. If you really want to take up engineering, tell them you couldn't handle both boards and entrance together. Ask for a second chance, maybe? There's a reason why one is allowed to sit thrice for the entrance, you know?

Jee in India isn't just an exam it is tough battle to fight for but at first you need to convince youself that failing jee isn't the end of your career. If you really want to become and engineer you can be a good one from any average engineering college in India be private or government you don't need the tag of IIT or NIT for that, it's not compulsory you see. ITTs are mostly known for their high placement opportunities as compared to other colleges you only if you know, you can apply for big MNCs including google facebook,amazon outside the campus , yes you don't need to be an IITian for that. So yes IIT gives you a boost to go high in your engineering career but isn't the only option. There are many people who completed their B.Tech from ordinary colleges and today they are hiring IITians so don't losse hope If you're able to convince yourself I am sure you'll be able to convince them too. Just know that it's you and your dedication that will make you successful not any college . :)

First you should know that why you want to clear JEE ? Because you wants this to happen or your parents wants.
You should tell them that JEE is tough nut to crack.
You should tell them that this is not important that only students who get admission in IIT are successful. There are Lots of private colleges which are far better than that new IITs.
Just tell them and handle them very softly.
