You just need to select the examination centre as far as the examination dates are concerned it is decided by the organising body and is provided to you on your admit card. However you can get tentative dates on the website of IIT Bombay.

You just apply the gate entrance examination form and you can select the examination cities not examination date.
After some day verification of application will be start.
If your information is correct than your application will be verified after verification your application will be complete.
Before Examination of gate examination you will get admit card which will mention exam center and date of Examination so you can't select your examination date it is decided by gate authorities.

At the time of filling the GATE 2021 application form, candidates will be required to choose four exam centres from 201 centres in order of their preferences. However, candidates can select two zones from the eight zones while choosing their GATE exam centers 2021. The final exam centre and exact location will be mentioned on the GATE 2021 admit card.
