Ews i.e economically weaker section category candidates has around 10% reservation for government or centralized Institute for courses Including UG , PG. however for jee main exam you must have the ews category certificate on behalf of your details, your name, category, family income, parents name should be on ews certificate. then you can only apply with it.

No, your father's EWS certificate will not be applicable during the time of documents verification for admission in NITs, IITs or any college. A candidate should have his/her EWS certificate and it should of working session not too old i mean to say here.
As you mentioned, you are under 18, but it is not a hurdle to apply for EWS certificate, you can apply for it and get it.
And before enlisting the documents that required for EWS certificate to be verified, I must clear you that your own income certificate will not be required, but they will see your family income proof.
Below are the requirement of documents for EWS certificate:-
Passport Size Photograph
Ration Card/ Epic Card/ Aadhaar Card
Domicile Certificate
Residential Proof
Documents Proving Family Income and Asset
Copy of IT Returns/ Pay Slips or Any Other Document
