I did my schooling at the Maharashtra state board(hsc)for my 12th i studied English ,pcmb, biology and environmental science as subjects. What subjects can i use to satisfy the 75 percent eligibility criteria for jee mains colleges (i want to exclude biology) or is it the overall of all 7 subjects?

First of all there's no percentage barrier to be eligible for JEE mains dear so you don't need to bother about it at all.
But yes,
To be eligible for NITs, IIITs, GFTIs , jee advanced( for iits) one needs at least 75% marks in aggregate in class 12 if belong to general or obc category or at least 65% marks if belongs to SC/ST or must be in the top 20 percentile in class 12 examination.
Only 5 Subjects are to be considered for calculating this aggregate percentage and these are :-
*Physics
*Chemistry
*Mathematics
*A language
*Any subject other than listed above

For calculating the 75% eligibility criteria for JEE mains, Candidates must have 5 subjects in the qualifying exam with Physics, Chemistry and Mathematics as mandatory subjects. So your percentage would be calculated by taking in account your marks in Physics, Chemistry and Mathematics and next two top scoring subjects.
You need to have 75%(65% for ST/SC/OBC) aggregate in 5 subjects including Physics and Mathematics and Chemistry.
For admission into NITs IIITs and GFTIs through JEE Mains, the students must have secured a minimum of 75% marks in their class 12th board exams or they must rank among the top 20 percentile in their qualifying examination.
