MTech data science is a new course introduced by IIT-G this year with only 20 seats. Admissions to Data Science is not directly based on GATE score, which means you have to apply online at IIT-G official website by April 8th and written test will be conducted on May 14,2019.
AI is a new course offered by IIT-H, so predictions cannot be made whether or not you will get a test/interview call. You can apply to it via COAP. Since you have an excellent GATE score and rank, you might get shortlisted or at least pass the qualifying criteria.
I don't think that MTech AI is offered in IIT-Jodhpur.
