I have issue of my aadhar card. I was updated it before 2 months. But it doesn't come yet to me from post office. Can I able to participate in Admission and documents verification process of MHT CET?

Well, in that case you should apply for it again online. You'll get it soon. Or you can go to your nearby places where correction of such documents such as adhar card takes place.
Maybe there is a delay due to the Covid-19 pandemic situations. Or lockdown issues mau have affected this. I'd suggest you to apply for it online once.
You can obviously apply for the admission process and document varification process for Mht-cet .
In document varification process, some sort of identity proof is required. In that case you can display your voter card or even pan card during the varification process if you still do not get your corrected adhar card. But if they ask for it, inform them about this and convince them, it won't be that hard of you have other identification proof.

If you have applied for the necessary correction of your aadhar card in your PO then they must have given you some receipt copy. So you can upload the official document you have now and then laterwards during physical verifications take that receipt, you will not face any problem.
