No, the gap between 10th and 12th doesn't affects your JEE eligibility. And also there is no age restriction in JEE so you can appear in the exam. You can give JEE Main a total of 6 times in 3 consecutive years while you can give JEE Advanced a total of 2 times in 2 consecutive years.

To get admission in IITs you must qualify in JEE Main and JEE Advanced and you must have passed 10+2 or its equivalent with Mathematics, Physics and Chemistry with 75% if you belong to general category and 65% if you belong to SC/ST category. If you are appearing in JEE Main in 2020 then you must have passed 10+2 in the year 2019 or 2020 and the applies to JEE Advanced, you must have passed 10+2 in 2019 or 2020 for the first time. If candidate who appear in 10+2 exam in 2018 and the results were declared after June 2018 then they are also eligible to appear.And you must be born on or after October 1, 1995 and there is 5 years relaxation for SC/ST/OBC/PWD candidates they must be born on or after October 1, 1990.
GAP in education does not matter. Check the above eligibility criteria if you fullfill all of them you are eligible to get admission in IIT provided that you must qualify in JEE Advanced.
