I have uploaded a photo without my name and date of picture written below for NEET 2021 and I have uploaded my sign in blue ink. Will I be able to change them when the correction window opens? If NTA doesn't send any email regarding any changes then, will there be any problem during counseling?

NTA clearly provided instructions to :
If you made any mistakes you can edit it in correction window from 8, August - 12, August 2021 so don't worry about it.
Here are few other things you will be able to edit through correction window:

- Upload Passport size photo taken after Sept 1, 2020 with White background,Name and date written below.
- Upload Signature In black ink on white paper and it Must not be in capital letters.
If you made any mistakes you can edit it in correction window from 8, August - 12, August 2021 so don't worry about it.

- Personal Details
- Exam center preferences
- Uploaded documents such as New photo or signature.

Yes don't worry.
Generally NEET opens ITS WINDOW FOR 1 WEEK FOR the correction in the form. Here you can correct all the mistake/ improvement that you hope to change.
Here you can change and upload fresh changes that you need to do.
