To become an IPS officer You will have to give Union Public Service Commission (UPSC) which is organize by Civil Services exam every year, happens in 3 sessions, Preliminary, Mains, and Interview.
Physical Requirement- Height - Height should be for ST/SC/OBC candidates is 160 centimeters (Minimum). Whereas, female candidates require a minimum height of 150 centimeters and women of ST/SC/OBC candidates are given relief of 5 centimeters. Chest and Eye Sight - For male candidates , they must have the chest of 84 centimeters and female candidates must have the chest of 79 centimeters

In order to become an IPS Officer, you must apply for CSE exam conducted by the UPSC. You must also crack the exam (preliminary, mains and interview) in order to get selected for the training.
The basic eligibility criteria required to appear for this exam is – candidate must possess Graduate Degree from a recognized University/Institute. So if you have done your 12th then I suggest you must do graduation in those subjects, like BA, BSC, BCOM for arts, science and commerce respectively.
However, if you are asking for 12th subjects then I suggest you must go with ARTS.
The candidate must be between the age of 21-32 years (for the General category candidate) on August 1 of the year of examination.

For IAS/ IPS exams humanities is the best field to pursue in bachelors degree. Humanities knowledge will help you while preparing for civil services exam (CSE). A btech/medical graduates will add no value in IPS entrance exam. Humanities with pol science/ history will help you in IPS. Although the selection of bachelors degree is a personal choice and depends upon your interests, but when in interviews also you are required to justify why you chose graduation in this particular field.
