I want to take a drop for MHTCET...Do I also have to give HSC boards again to be eligible for MHTCET 2021? Or can I continue with just MHTCET preparation? I gave HSC STD 12 in 2020, so is it OK?

If you fulfill all the eligibility criteria for MHT CET (and have passed your 12th standard exams with minimum required percentage) then you do not have to reappear for 12th to retake MHT CET next year.
You'd only be taking a drop year to prepare for the exam that is it.
Furthermore, the eligibility criteria for MHT CET states that there is no age limit to appear for the MHT CET exam so that is also a plus for you.

You don't need to appear for board exam again to appear MHTCET in 2021. As you have passed MHTCET in 2020 you can prepare only for MHTCET and further sit for the exam in next year. As per MHTCET eligibility criteria you must have passed HSC/class XII exam or its equivalent examination with Physics and Mathematics as compulsory subjects with any one of the subjects – Chemistry/Biotechnology/Biology/Technical/Vocational subjects. So if you fulfill the criteria you are absolutely eligible for MHTCET giving a year drop. That's not any issue.
