first of all there is no limit to appearing in gate exam, and there is no particular age limit applies. so even if you absent in one of your attempt in gate exam, it does not effect for your future gate exams, however there is no maximum age limit for appearing in mtech admission in most of the colleges, but for psu recruitment there is certain age limit category wise applied.

Need not to worry much, if you're absent for exams it will be considered as absent but not as an attempt. Just your attendance is recorded, but your attempts are still unused. Hope this helps you:

An attempt in any entrance exam is only when you attend for the exam in person. If you do not attend for the exam, even if you have downloaded your hall ticket, it is not called an attempt. If you filled the application form, and got your hall ticket but did not attend the exam, it is considered absent. And an absent is not an attempt. This rule applies to GATE exam also.
