You don't need separately 75 per cent marks in each of physics chemistry maths rather you need 75% in your aggregate of your 12th board examination to be eligible for NITs/IITs. But for this year i. e 2021 this percentage barrier has been lifted off
5 Subjects to be considered for calculating aggregate percentage are :-
*Physics
*Chemistry
*Mathematics
*A language
*Any subject other than listed above
Admission in NITs is through jee main.

Jee main eligibility criteria is given below-
-) Qualification required :- to be eligible for JEE mains for BE or Btech you need 10+2/equivalent qualification with Physics, mathematics as compulsory subject along with anyone of Chemistry or Biology or Biotechnology or Technical Vocational Subject.
-) Passing year :- one is eligible for JEE main examination for consecutive three years starting from the year of passing for 12th /equivalent examination i. e to be eligible for JEE mains 2021 you should be either appearing for 12th board exam or equivalent in 2021 or should have passed it in 2020 or 2019
-) There is no age limit to be eligible
-) there is no minimum percentage requirement to be eligible for JEE Main.
But yes,
To be eligible for NITs, IIITs, CFTIs one needs at least 75% marks in class 12th if belongs to General or OBC category or at least 65% marks in class 12th if belongs to Sc or St category. For this year i. e 2021 this minimum percentage requirement of 75% - 65 % has been lifted off.

Admission in IITs is through JEE advanced examination
For your reference
jee advanced eligibility criteria is given below :-
-) you need to pass your class 12th with at least 75% marks in aggregate in class 12 if belong to general or obc category or at least 65% marks if belongs to SC/ST or must be in the top 20 percentile in class 12 examination. For this year i. e 2021 this percentage requirement in class 12th has been lifted off.
-) You can give JEE advanced examination for the maximum of consecutive 2 years starting from the year of appearing for your 12th examination i. e to be eligible for JEE advanced 2021 your 12th board examination appearing year should be either 2021 or 2020 .
-) There is upper age limit, according to which to be eligible for jee advanced 2021,you should be born on or after 1st October 1996. There is 5 years of age relaxation for SC, ST and PwD so candidates of SC/ST /PWD needs to be born on or after October 1, 1991.
-) you must qualify JEE main 2021 to be eligible for jee advanced 2021

I hope you are doing good. With reference to your query , I am very glad to inform you that 75 percent crteria of pcm is waived off for the academic year 2021-2022 . so it is not compulsory to get 75percent in aggregate (you dont need to score 75 in them) only for the year 2021-2022. You can appear in the jee main examination but you need to score very good rank to get in NITS and IITS
