It is not necessary to score 75% in each of Physics, Chemistry and mathematics for NIT IIT or government funded institutions but, the eligibility criteria for admissions in these institutions specify that,
candidates of General and OBC categories must have secured a minimum of 75% aggregate marks in their Class XII board examination (or equivalent). SC, ST, and PwD candidates should secure 65% in the exam.
or
Candidates should be in the category-wise top 20 percentile in their Class 12 board exam or equivalent exam.
Which means the aggregate percentage in 12th should be more that 75% or 6% as per your category or your percentage should be in the list of top 20 percentile for your board.

No you don't need to get 75% in each subject but
The basic minimum eligibility to get admission in NIT is it is of government funded Institute is to get a total aggregate of 75% with physics chemistry and maths is compulsory subject with one language and any other subject other than the 4 already mentioned above.

it is not necessary to score 75% in each of subjects, the eligibility criteria for general and obc students is candidates need to secure 75% marks in aggregate in 10+2 course from a recognized education board, for sc/st /pwd candidates the qualifying marks criteria is 65% in aggregate in 10+2 course.
