Dear aspirant,
For AIIMS, you need to have crystal clear basics in all the three subject. NCERTs are a must for AIIMS. If you have done multiple readings of NCERTs with clear basics, then it is a plus point for you.
Also, practising lots and lots of questions (Specially AR type) ia also mandarory as it provides an insight of the examination pattern.
You can practice from not only MTG but also from other books also (but first get your concepts cleared).

The books that you mentioned are enough but for more elaborative practice you should use Universal Self Scorer and Dinesh practice books as well.
These books have a large number of questions to practice from every unit and sub units.
For theory you can go for HC Verma for physics.
If your base is strong then you will be easily covering the syllabus.
