Hey...!
Yes, you can complete the NCERT books of class 11th and 12th for the preparation of NEET and AIIMS in 2 months but you have to work hard and smart for this. You have to give 45 hours to Biology alone and your total study hours should be 1214 hours during these last 2 months because you have to also prepare well for Physics and Chemistry as well.

NCERT books are the most reliable study material especially for the Biology because 8085% questions in NEET exam are directly based on the theory of NCERT books so focus completely on NCERT books for a score of 300+ marks in NEET exam.

There are 38 chapters in NCERT Biology including class 11th and 12th so set your target 1 chapter per day for easy chapters and 2 days per chapter for tough or difficult chapters. For better understanding, you can prefer videos available on online educational platforms or on YouTube.

After completion of each chapter, practise NCERT based objective questions for self-analysis and revise the topic again in which you face difficulty while solving the questions. Practice the questions in exams like environment with time limit for improvement of speed and accuracy.

Practice previous year papers of NEET and AIIMS at least of 10 years so you have no idea about the difficulty level of the questions in NEET exam.

Hope you are doing well,

The possibility entirely depends on you. So fix a mind set and have a plan on each day to study for minimum of some hours according to your day if you have more time utilize that time too mainly you should have concentration and need to be completely dedicated then it will be possible to read NCERT Chemistry and Biology completely in a month and also you may revise it once. But it may feel you difficult and messy so select important and main points understand that and complete it then go deep into that so that will be able to complete entire topics.

NCERT Textbooks of Class 11 and 12 are the most important books for better understanding and problem solving. You always start your preparation with NCERTs as these are written in simple Language which is easily understandable to everyone. Now NCERTs don't do it in a hurry as this is the time to prepare your base. It's not difficult to complete the entire two books in a month but the fact is if you do this you'll end up creating a mess. At end of the month, you'll not have enough preparation of these two subjects. So it is always advised not to complete any subject in a hurry. Be patient while preparing your base. This may take time more than required but you'll have cleared your basics and if your basics are done that you'll not need to think about that much before the D-Day. Also write down all the formulas/reactions in a note books so that you can access it any time you want. You can write your own short notes. Do revision once you complete your syllabus.

It is very-very tough to study complete NCERT for both the subjects. It is really very tough. I guess that you are preparing for NEET exam. So, surely NCERT will be first priority in preparation. And you must have to study it. Completing whole NCERT point to point will be very difficult in just one month. But till NEET 2021, you have plenty of time for preparation. So first of all, complete your NCERT books. And after that, move to some other good books. Some top books for NEET are listed below.
