Yes, you can do triple degree before cracking IAS but remember that you can't do all 3 simultaneously as it's illegal in India but yes, as per new changes in education policy by UGC, you can pursue two degrees simultaneously.
For cracking IAS, your 3 degrees won't make much difference but your prepration will be very much important as cracking exam depends upon your level of preparation.
Don't compromise with your prepration due to tripple degree.
Also there's no benefit given to the triple degree holder candidate on single degree holder candidate, both will be treated equally.

To become an IAS officer, you need to appear for UPSC.
UPSC is a 3 stage selection process involving Prelims, Mains and Interview which tests your personality test. Prelims has 2 Papers namely General Studies and CSAT.
General Studies has Current Events, History of India and Indian National Movement, Indian and World Geography, Indian Polity and Governance, Economic and Social Development, Environmental Ecology, Biodiversity and Climate Change and General Science.
CSAT has Comprehension, Interpersonal skills including communication skills, Logical Reasoning and Analytical ability, Decision making and problem solving, General Mental Ability, Basic numeracy and Data Interpretation.
This is where a triple degree can help you in your preparation. So you need to select the subjects wisely. Not many Colleges in India offer Triple degree but if you want to crack UPSC prelims, a Triple degree can certainly help you in the long run. Your selection of subjects can be from Political Sciences, Sociology, etc. They can actually help you in qualifying Prelims. From there on, in Mains you can choose one of your Majors as an Optional subject. That path is certainly much easier.
