My jee main rank is 120000 and belong to gen EWS category. where should I move UIET chandigarh ( mechanical) or take part in CSAB counseling and move towards any GFTIs or move towards MMM Gorakhpur? My home state is Uttar Pradesh.

As you have secured 120000 rank in jee mains, then I can assume that this is your CRL rank under ews category.
So, i would give a simple advice, that instead of taking admision in uiet chandigarh or mmm gorakhpur, attend the csab special round counseling.
Though you will not get any nits or iiits or iiest, but you will get some top and good gftis.
With this much rank you can gey some of the top gftis like - Sant Longowal Institute of Engineering and Technology, Gurukula Kangri Vishwavidyalaya, Haridwar, Institute of Technology, Guru Ghasidas Vishwavidyalaya (A Central university), Bilaspur, (C.G.), Assam University, Silchar, etc.
But don't think that I am in against of uiet or mmm, these colleges are also very good, but as per my opinion you should go with gftis because there is a chance that you will get top gftis in csab special round. Or as per your convenience you can take admission in uiet or mmm too if you are getting.
