I appreciate your confidence to get full out of full marks in both the exams. But let me tell you, there is no book, learning which you will get 100% marks in both the exams. If there had been any book, you would have seen more than fifty percent aspirants, getting 360/360 in main. There would have been no coaching centers and everybody would have been just cramming the books.
For getting the highest possible marks, what is required is the concept building ability, and not cramming. You will have to practice as much as you can and develop new concepts yourselves.
Now coming to the books, I would divide the books into two sections. For the first Section, this material will be useful for securing marks, and going through which you can get around 60 percent marks in both the exams. Whereas for the second section, the books are those, that will help you build your concept, and if completed properly will fetch you maximum marks. Preparing from these books, will even help in your graduation as well as throughout life.
Section 1:
Physics: NCERT Physics for class 11th and 12, H.C. Verma, previous year papers, any good coaching institute course material for the respective subject.
Chemistry: NCERT Chemistry for class 11th and 12th, Chemistry made simple J.D. Lee, Arihant, Chemistry for JEE by O.P. Tandon, and New Chemistry by R.C Mukherjee, any good coaching institute course material for Chemistry.
Mathematics: NCERT Mathematics, School textbook, R.D. Sharma, any good coaching institute course material for Mathematics.
I would suggest you subscribe to the Distance learning program or arrange the course material form any senior. Please include the past year (37 years paper) for having good practice. Most of the concepts are repeated so, having a good hold over the concepts in past year papers will help you get good marks.
Section 2:
kindly go for the authors(foreign), as their books are much more preferred:
Physics: I.E. Irodov, H.C. Verma, Resnick Halliday, D.C. Pandey, and Tata Mcgraw Hill.
Chemistry: J.D. LEE, O.P.Tandon, P. Bahadur, R.C. Mukherjee, Organic chemistry by Morrison Boyde.
Mathematics: Only practice is required in this subject. You may refer to books such as R.D. Sharma, S.K. Goyal, Arihant Publications books, A Das Gupta mathematics books, etc. Getting a good coaching material will help you in practice. Refer to the books, for concept development.

For JEE, most of the books go by the name of the authors, so just having the name of the author and subject, you can easily get books in the market.
Also, you may consider youtube channels that offer good lectures for free!
Please remember, only hard practice and well application-based study can fetch you full marks in JEE. The paper is quite tough and a good revision and hold over concepts is required to succeed.
