So as you are asking that what should you take in your intermediate class if you want to become an IAS officer. Just listen one line take whatever excites you and in whatever you feel interested.
This is because UPSC welcomes every candidate from every domain and there is no any restriction on the basis of of stream. So you are free to take anything and to enter into any stream according to your interest.
But if you are asking about the stream which would help you in your UPSC civil services examination then I would suggest you to take Humanities stream as most of the syllabus you will be covering from very early age.

UPSC EXAMS CAN BE WRITTEN WITH ANY STRAM IN CALSS 12TH.
HOWEVER IT IS MORE CONVIENT TO DO FROM ARTS/HUMANITIES STREAM BECAUSE YOU BECOME FAMILIAR WITH THE SUBJECTS.
