Open category basically means the general category in home state and other state quota. But let me tell you that as you mentioned that you belong to some category so finally you would be admitted through your category quota.
As the cut off will be lower in your category quota so you will be admitted through that as per this rank it is very difficult to grab a seat in any of the good colleges if you do not belong to sc/st category.

Open Category means the seat is unreserved. However in Open Category, there are sub-quota present. One sub-quota is Home state and other is Other State. So, if you do your councelling with open category then your chances of getting seat becomes more less than with reserved category. Your category rank suggest you belong to OBC. So, if you take OBC reservation than you are eligible to be considered for OBC seat+ Open Category seat. But if you decide not to take OBC reservation then you are eligible only for Open Category .
With 124749 Rank and Home state Uttar Pradesh, it is Difficult for you to get NIT in JOSAA Councelling. I suggest you go for State Level Councelling. You can get following colleges in UP State councelling:
- United College of Engineering and Research, Greater Noida
- Integral University, Lucknow
- GLA University, Mathura
- Rama University, Kanpur
- HBTU Kanpur - Harcourt Butler Technical University
- Shiv Nadar University, Greater Noida
