Since you have already submitted your application and result has been declared having the caste you provided, ship has already been sailed. Exam authorities can not make any change for you now.
This is the only reason, they provide form correction dates to students for a longer period so that their mistakes can be rectified.
Now you can't go to authorities for any kind of change, you can visit college's administrative office for support, in case they can help you out. Moreover they are also not obliged to change your application form because your caste can make a huge difference in your result.

I want to inform you that you cannot change anything in your NEET application form now as the time for correction has already expired in 2ND week of NOVEMBER 2021 so you cannot do anything about that.
Now you have to go for counselling for the same caste as you have mentioned in the NEET application form.
