You can choose either Science or Humanities. It depends on what you are interested and which branch of administration you are interested in. In order to clear the exam as well as to select any branch that is directly of citizen concern you can choose economics, political science, history, English. The UPSC examination is conducted in two stages: Prelims and Mains. If you pass in Prelims you can attend the Mains. The questions asked are of general type, logical reasoning, essays, questions related to the Indian administration etc. The responsibilities of IAS officers include implementation of policies set by the legislation in various offices of Indian administration.
So depending on your area of interest, you can choose the degree subject. You can go to revenue, as secretary, development commission in various schemes etc. All of this is preceded by training once you are selected.
