Solution : $\frac{2}{3} \times \frac{6}{5} \times \frac{10}{4}+\frac{1}{8}-\frac{3}{8}$
= $\frac{4}{5} \times \frac{10}{4}+\frac{1}{8}-\frac{3}{8}$
= $2 – \frac{2}{8}$
= $2 – \frac{1}{4}$
= $\frac{7}{4}$
Hence, the correct answer is $\frac{7}{4}$.
