The best way to avoid committing mistakes is to strengthen yourself in every department. As you will be aware of how to approach each question then automatically it will reduce your time and increase your accuracy percentage. This can be achieved onlu with lots and lots of practice, thinking and solving but seeing it practically it's not feasible for everyone.
So in your case I will tell you one more solution while going through mock tests first of all try to figure out your strength part in each section. Try to get a list of type of questions or the chapters which are your strong part and you will able to crack almost every question. Then figure out your medium strong part and finally difficult part. You need to do this analysis thoroughly in order to overcome this problem.
After this analysis start attempting tests in a different pattern. First attempt all the questions which are your strong part skipping the rest of the questions. This will not only fetch you marks but also save your time and boost your confidence. Now you can start attempting the questions which are time consuming for you but as you have save your time by solving one part of question paper so you won't need to rush and this will automatically increase your accuracy. And in the end if you have time to attempt difficult questions you can give it a try or skip them.
In this way you will save your time by not engaging in difficult questions for you whose probability of getting correct is low. Also at starting by quickly attempting questions from your strong department will get you marks and save your time which could be utilised in attempting questions which are medium level for you and require a little more time. As you have already saved your time so you won't need to rush here. Hence your overall accuracy will increase within time limit.
On personal note for figuring out your strength and weakness is not an easy thing. For this analysis you need to attempt many tests and Mark down the time taken in solving each question. Then sort out each question in different departments and compare the accuracy percentage of each department.
I know this process seems to be hectic but honestly after 2-3 tests you yourself will find it easy and as you start implementing this method you will definitely see a drastic improvement in your speed and accuracy.
