This is because you didn't select the option of OPEN SEATS while registering for All India Quota Counseling. After you select this option you will find AIIMS and JIPMER institution during your choice filling.
There were a total of 4 options, out of which which you had to select counseling for -
1) Open Seats (AIIMS, BHU, JIPMER, AMU)
2) Deemed Universities
3) All India Quota
4) Armed Forces Medical
So you had to choose both option 1 and option 3
------- You can correct your mistake by exercising th RESET option. The Medical Counseling Committee, MCC has provided 'RESET' facility that could be used only once to make any corrections you made during Registration except the mistake in Category filling.
------ The RESET option can be used only to change the type of counselling i.e add or delete different type of counselling and not to change the category.

The admission to the AIIMS are only on the basis of the All India Quota Counselling. I think you are applying for the state quota counselling as a result, the AIIMS Medical colleges are not appearing.
