This answer is based on previous rolling assistant professor hiring trends from IIT Delhi itself, what they typically require is:
- Ph.D. and First class equivalent grade in the previous course/degree pursued with a good academic record throughout
- minimum of 3 years teaching experience (if you are a Ph.D. candidate then research paper publication would be an advantage)
- if your Ph.D. is done but have less than 3 years of experience in teaching then they'd even consider you for assistant professor grade 2 (higher pay scale)
these are the minimum requirements to apply there, rest is up to the selection board and the candidate's qualifications. Bear in mind it is all highly competitive.

A minimum three years teaching/research/ professional experience, excluding gained before and while pursuing PhD.

As soon as you finish Masters, You can join as an Assistant Professor (ad-hoc)in almost all NITs and few IITs. (There would be an Interview only if you meet criteria like 55-60% in your Masters)
To make into Faculty you need to clear NET conducted by CBSE/UGC or any equivalent exam Or 2–3 years of Teaching experience. You will become a Assistant Professor now,
There are many people with PhD but still they are Assistant Professor. So, PhD is not the only criteria to become a Professor or an Associate Professor.
