The overall rank is the or AIR is the rank which you get among all the candidates who appeared for the exam but the category rank is the rank which you get among all the candidates of that category who appeared for the exam. To make it more clear let us take an example. Suppose someone got overall rank of 1000 and he lies in OBC category and his category rank is 431. It means among all the candidates who appeared for the exam (say total number be 10lac) his rank is 1000. The category rank signifies the rank secured by him under his category i.e. among that 999 students who are ahead of him there 430 OBC student and thus his rank is 431.

Suppose you go for admission and want a seat in Maulana Azad Delhi, then if your overall rank is enough to get the seat in that college then you will get it from your overall rank and if you cannot get a seat in that college then they will check your category rank to give a seat in that college and if possible they will allocate a seat in that college from your category rank. Thus your category rank will help you to get best of the seat you can get.

For example- if you are from obc category then your rank will be calculated among obc category students
