Hi there,
After cracking NEET one has to study for around 5 years with a compulsory internship of 6 months to get a successful degree in MBBS. And if someone writes NEET after completing their graduation it would mean 3 additional years before the beginning of your studies in Medical Sciences and the person would lag behind 3 years as compared to his/her counterparts.
In a duration of (5+3) i.e. 8 years or so one will actually be able to complete their Specialisation (Postgraduate) degrees along with MBBS if they write NEET right after XII.
Moreover, preparing for NEET during BSc can be a very difficult task as both the syllabuses are very different. And in BSc, in your college life, there will a lot of academic pressure from practicals to files to projects, seminars, and what not. It is advisable to prepare for NEET in school in classes XI-XII, now you know why.
